As we are coming to the end of World Vegan Month, I thought I would share with you a couple of my favourite plant based recipes and food discoveries. I have eaten a plant based diet for a year now and never felt better. When I started my journey into veganism, it was purely selfish. I wanted to help my health but as I started to learn more, I soon realised this was way bigger than me and my indigestion. Helping the environment and saving animals from cruelty are now the bigger reasons for being vegan.
I have tasted better food than I ever have since being plant based, with the most crazy delicious meal at Belmond Le Manoir to enjoying local vegan restaurants in Norwich such as Erpingham House and Tipsy Vegan. I love Wagamama as there is a great selection of meat and dairy free dishes.
But, I can’t eat out every night! So, it’s a good job I have an allotment and grow my own food and keep us in good supply of veganic grown fruit and vegetables plus I enjoy cooking and hubby is a pretty good chef himself! Since being plant based, I’ve been able to experiment with different flavours, textures and tastes. It’s been the most amazing journey already and I love it.
I received some amazing new Squashes from Thompson & Morgan, and it’s always brilliant to cook with a new variety of vegetable. These didn't disappoint that’s for sure. Picture a Squash that cooks up like potato by roasting it in the oven and contains fewer calories, less carbohydrate but has more fibre. Winter Squash ‘Mashed Potato’ is white skinned and when baked in the oven and mashed, it has the look and taste of our classic mashed potato. Winter Squash ‘Baked Potato’ looks a little lighter than a butternut squash and tastes just like baked potato when cooked. Finding these new varieties and experimenting with them is all part of the plant based fun. Grab your seeds HERE and try growing them next year.
Some evenings, after a long day it’s great to reach into the freezer and pull out an allplants meal and not have to cook at all. The delivery comes with 6 meals, which you can pick from the website and they are…as it says…made from all plants! From Lasagne Noci to Smoky Soul Chilli and my favourite Mac and Green, there are plenty of choices just to pop in the oven or microwave. Saves cooking on those days when I really can't be bothered! Knowing that I am still getting all of the nutrition needed from a company that cooks fresh and delivers in all recyclable packaging makes for a nice treat.
